What we take is the following:

Spare bearings
Bearing grease
Spare U-bolts (springs) We also double nut the U-bolts for safety.
Thick fencing wire ( Very handy)
Assorted shifters. screw drivers, duct tape, 
Spare nuts for the rims
A small tarp for crawling under the camper.
Living the dream working our way around Australia.
