Title: Slide out kitchen counter top

Looking for ideas to replace the sad looking plywood top of my slide out kitchen.
Something not too heavy and practical

Laminex over the top, cheap, cheerful and serviceable.

x2... but once it starts to look average and gets scratched, it really looks bad
