Are the bags just double zip lock poly bags, or are they the ones with the internal ribbing

I do similar but don't use the water, just fold the meat / fish over and pushes air out, before it goes into the freezer, this  would be better less air

A roll of glad wrap does as good or better and no stuffing about. In so far as relating to a cryovac, neither glad wrap nor the bucket method is going to preserve meat anything like a cryovac. At best it is going to save some space in the freezer and look neat.

We've used zip lock bags and a 12 volt mattress air pump in reverse.. Not as good an effective as the real thing, but does go a long way towards it.. Difference between wrapping or squeezing air air out in water is that one can remove just that little bit more air..
